Cornmeal-Rye Waffles

 Adapted from King Arthur Flour "Whole Grain Baking"

  • 3 C buttermilk (I used 1 1/2 c water, 1/2 c Buttermilk powder and 1 c Chobani plain lowfat yogurt)
  • 2 eggs
  • 6 T butter, melted
  • 2 C yellow cornmeal
  • 1 c whole rye flour
  • 1/4 c sugar (try less sugar and adding cheese and bacon for a savory waffle)
  • 2 t baking powder
  • 1 t salt
  • 1 t baking soda
  • berries or choc chips make good mix-ins

1. Whisk together wet and dry ingredients in separate bowls. Then combine in one big bowl. Let sit for at least 10 minutes to allow cornmeal to soften.  

2. Cook in waffle maker according to manufacturer's directions. Might be better in a Belgian Waffle iron, they're hard to get crispy in our big waffle iron.
