Coconut-Cilantro Rice

Serve with Chicken Stir-Fry with Peanut Sauce.

Ingredients:

- 1 cup light coconut milk
- 1/4 cup water

- 1 cup uncooked long-grain white rice

- 1/4 cup chopped cilantro

Directions:

Combine coconut milk and water in a medium saucepan over medium-high heat. Bring to a boil.

Stir in rice. Reduce heat to low. Cover; simmer for 17 minutes or until liquid is absorbed.

Let stand 5 minutes, then stir in cilantro.
