Ingredients:
- 1 cup brown sugar
- 3 tablespoons smoked Spanish paprika (pimenton)
- 2 tablespoons dried ground chipotle or ancho chile powder
- 1 1/2 tablespoons garlic powder
- 1 1/2 tablespoons onion powder
- 1 tablespoon kosher salt
- 1 teaspoon ground cumin
- ribs (this rub is enough for 3-4 racks of baby back ribs so either make a 1/3 recipe or set aside extra rub for later)
- barbecue sauce of choice for garnish, as desired
Directions:
The night before, combine the first 7 ingredients. Mix thoroughly until well-blended. Remove the spare ribs from their packaging. Rinse and pat dry. Cut off any excess fat. Use your hands to pat the rub onto both sides of the ribs, going heavier on the meaty side.
Place the ribs in a heavy food-storage bag. Refrigerate overnight.
Half an hour before you want to begin cooking the ribs, preheat the oven to 225F and remove the ribs from the refrigerator to warm up.
Wrap the ribs in aluminum foil. Place ribs on a sheet pan, bone side down, and place in the preheated oven. Cook for 3 hours.
Remove the pan and ribs from the oven. Check with a meat thermometer in the fleshy part between a pair of bones, to ensure they are at least 170F. If not, cook a little longer.
Reduce the oven temperature to 180F. Cook for an additional 2-3 hours to melt away more cartilage and increase the tenderness.
Take the ribs out of the oven and turn the setting to broil. Remove the aluminum foil from the ribs. Apply a thin coating of barbecue sauce. Place the ribs under the broiler until the barbecue sauce just begins to char (about 10 minutes).

Kansas City Barbecue Sauce
Ingredients:
- 1 cup ketchup
- 1 tablespoon Worcestershire sauce
- 1 cup molasses
- 1/4 cup chopped onion
- 2 tablespoons brown sugar
- 1 tablespoon garlic powder
- 1 teaspoon black pepper
- 1 teaspoon cayenne pepper
- 2 tablespoons lemon juice
- 8 oz tomato sauce
- 2 teaspoons salt
Directions:
Combine all ingredients. Simmer for 1 hour.
- 1 cup ketchup
- 1 tablespoon Worcestershire sauce

Barbecue Rub Ribs
Ingredients:
- 4 lb baby back pork ribs
- 4 cloves garlic, sliced or chopped (or equivalent dried minced garlic)
- 1 1/2 teaspoons white sugar
- 1 1/2 teaspoons paprika
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 cup brown sugar
- 1/2 cup cider vinegar
- 1/2 cup ketchup
- 1/4 cup chili sauce
- 1/4 cup Worcestershire sauce
- 1 tablespoon lemon juice
- 2 tablespoons chopped onion (or equivalent dried minced onion)
- 1/2 teaspoon dry mustard
- 1 clove garlic, crushed
Directions:
Preheat oven to 300 degrees. Place ribs on a rack in a shallow roasting pan. Scatter the 4 cloves of sliced or chopped garlic over the ribs. Cover; bake for 1 hour.
Meanwhile, in a small bowl, mix together the white sugar, paprika, salt, black pepper, chili powder, and ground cumin.
After the ribs have cooked for 1 hour, rub half the spices over one side of the ribs then bake for 15 minutes. Then rub the remaining spices over the other side of ribs and bake for another 45 minutes. (At this point the ribs should have baked for a total of 2 hours.)
Once the ribs have cooked for 1 hour, start making the barbecue sauce: In a small saucepan, mix together the brown sugar, cider vinegar, ketchup, chili sauce, Worcestershire sauce, lemon juice, onion, dry mustard, and 1 clove garlic. Simmer over medium-low heat, uncovered, for 1 hour.
After the ribs have cooked for 2 hours, pour the barbecue sauce on top and bake for another 30 minutes.

Becky's Favorite Ribs
With a tasty homemade barbecue sauce, these ribs are pretty fantastic!
Ingredients:
- 4 pounds baby-back pork ribs
- 1/2 cup honey
- 1/2 cup prepared mustard
- 1/2 cup red wine vinegar
- 1 tablespoons vegetable oil
- 4 teaspoons Worcestershire sauce
- 2 teaspoons butter
- 2 teaspoons coarsely ground pepper
- 1 teaspoon salt
- 1 teaspoon hot pepper sauce (optional)
Directions:
Preheat oven to 325 degrees.
Cut ribs into serving-size pieces. Place ribs meat side up in a roasting pan. Bake, uncovered, for 1 to 1 1/2 hours, then drain.
Meanwhile, combine the remaining ingredients in a saucepan. Bring to a boil over medium heat. Reduce heat, and simmer, uncovered, for about 30 minutes or until slightly reduced. Remove from heat and cool at room temperature for 1 hour.
Brush sauce over ribs. Reduce oven temperature to 300 degrees. Bake, uncovered, basting occasionally, for 30-45 minutes or until ribs are tender.
